cheezy rice and broccoli

After making Jill McKeever's Game Changer Cheese Sauce - https://youtu.be/bKlHFXOjkfA I decided to make brown rice and broccoli casserole. Using a package of frozen broccoli and adding cooked rice until the balance seemed right. Adding the cheeze sauce and mixing. Spooned into an 11 x 7 Pyrex making it level. I added some crushed cornflakes. Baked at 325° F for 45 minutes. I will eat it all, but it was low on flavor, probably too many years of Mexican and Southwest eating. Perhaps adding some canned diced green chilies next time and more cheeze sauce. Maybe with a couple of dabs of vegan yogurt.

So in preparation for a batch of funeral potatoes I made a batch of Jill McKeever's  Game Changer Cheeze Sauce (recipe below, my changes are indented). For the record, this ain't cheese, but it is good eating if you are one of us that like it. To taste good and be made without nuts or oils is an accomplishment! One of my favorites is turning it into a queso dip, it is excellent. Did I mention that it is fat-free?
