a cheeze sauce that helps your heart

So in preparation for a batch of funeral potatoes I made a batch of Jill McKeever's  Game Changer Cheeze Sauce (recipe below, my changes are indented).


For the record, this ain't cheese, but it is good eating if you are one of us that like it. To taste good and be made without nuts or oils is an accomplishment!

One of my favorites is turning it into a queso dip, it is excellent. Did I mention that it is fat-free? Air fry some tortilla wedges for low-fat tortilla chips is da bomb.

Jill's 5-minute Game Changer Cheese Sauce (nut-free, gluten-free, no added fat)

FULL RECIPE:
2 cups rolled oats
1/2 cup nutritional yeast flakes
1/4 cup cornstarch
2 teaspoons onion granules
    ¼ teaspoon garlic powder 
2 teaspoons sea salt
1 12-oz. jar Roasted Red Bell Peppers in water
1 tablespoon lemon juice
1/4 teaspoon Pecan or Apple liquid smoke
    ⅛ - ¼ teaspoon chipotle powder 
    ⅛ teaspoon smoked paprika 
4 cups very warm water

Using my Blendtec blend on soup preset, or until sauce begins to thicken. (My Blendtec's motor doesn't seem to bog down like some other brands as the sauce hits the thick mark, watch and listen for the clues.) Once thickening has begun, stop the blender and quickly transfer to a large container that holds at least 6 cups. The cheese sauce will continue to thicken as it cools even slightly. A skin will form that can be stirred back in, or if it bothers you discard it.
