my favorite almost soup
I've been making this for some time now.
It started out as fortified mashed potatoes until I didn't measure the water correctly. It turns out like loose mashed potatoes, but not quite soup.
Today for the first time I used the dehydrated FRONTIER CO-OP Deluxe Vegetable Blend for Soup mix. Up until now I had been using Harmony House Dehydrated Vegetable Soup. With only this one test the Frontier seemed to rehydrate closer to 'fresh'. I also purchased Mother Earth Products Dried Vegetable Soup Mix to test in the coming weeks.

My Favorite Almost Soup - slwtc*
Servings - 2 (1 as a meal for me)
Prep time - 4 minutes, cook ~28 minutes, 32 total
Equipment - electric pressure cooker
Ingredients
3 cups water
3/8 cup dehydrated vegetable soup mix (more or less to your taste)
1 pkg Idahoan Roasted Garlic Mashed Potatoes mix (select your own favorite)
Directions
Add the water and soup mix to pressure cooker (I'm using an Instant Pot). Close lid, set vent to pressure mode (not steam or venting), set to 6 minutes on high pressure, start the cooker.
After cooking completes, do a 10 minute natural release (allow 10 minutes to elapse before doing a quick release). Remove the lid and stir in the mashed potatoes mix until evenly mixed. Wait 4-5 minutes.
Plate and serve (if you are me, you remove the inner pot and use it as my bowl).
Sometimes I garnish with TABASCO Chipotle sauce.
