INSTANT GARLIC MASHED POTATO STEW
Although I've been making this for some time now using a mashed potatoes mix this is the new 'from scratch' recipe.
I had this for brunch today using the dehydrated FRONTIER CO-OP Deluxe Vegetable Blend for Soup mix, Idahoan Original Mashed Potatoes, along with McCormick Salt Free Garlic & Herb Seasoning.
I like super simple cooking. I fixed this in the Instant Pot instructions are for the stovetop.
INSTANT GARLIC MASHED POTATO STEW - slwtc*

READY IN: 30 mins
SERVES: 4 (or 1 if you are me)
INGREDIENTS
3 cups water
⅜ cup dehydrated vegetable soup mix, my favorite (today) Frontier CO-OP available on Amazon
2 teaspoons McCormick Salt Free Garlic & Herb Seasoning (still looking for a roasted garlic product)
½ teaspoon onion powder
1¼ cups instant potato flakes
pepper and Tobasco to taste
DIRECTIONS
Bring water and veggie mix to a boil in a medium saucepan and simmer for 5 minutes.
Meanwhile, mix potato flakes and seasonings.
Add potato flakes mix to the hot water mix and let sit covered for 5 minutes.
Serve. I add pepper and Tobasco Chipotle Sauce to my liking.
